Heirloom Tomato Galette
🍅 HEIRLOOM TOMATO GALETTE 🍅 A favorite heirloom summer recipe!
Ingredients:
2 cups flour
1/2 teaspoon salt
3/4 cup cold cubed butter
1T vinegar or vodka
1/4 cup ice cold water
1 egg, beaten (egg wash)
2-3 heirloom tomatoes, sliced thin
4 cloves garlic
Fresh basil
Olive oil
Salt and pepper
Grated parmesan
In a food processor, pulse together flour, salt and butter until pea-like clumps form. Transfer to a bowl and add in vinegar and a little water until a shaggy dough forms. Knead into a disc and refrigerate for 2 hours (or freeze for 30-45 min).
Slice tomatoes and salt them — set aside. Slice the garlic and toss in a little olive oil. Transfer tomatoes to a paper towel to pat dry.
Roll out the dough disc on a floured surface. Transfer to a parchment lined baking dish. Drizzle with olive oil, grate on some parmesan and season with crushed peppercorns. Arrange the tomatoes, leaving a 1” border. Sprinkle in the garlic and basil. Fold in the edges of the dough to form a crust and brush on the egg wash. Bake at 400° for about 45 minutes or until golden.
Drizzle with some olive oil and more fresh basil, salt and pepper. Enjoy!!
