Peaches & Burrata
🍑 grilled peaches with burrata 🍑 summer salad season is in full swing 💫
Ingredients:
2-3 ripe peaches
Prosciutto
Burrata
Arugula
Olive oil
Salt & pepper
Basil
Balsamic vinegar
First we’re going to turn balsamic vinegar into a glaze — all you do is pour half a cup of balsamic vinegar into a sauce pan. Bring to a soft boil then simmer for 15-20 minutes until it reduces. That’s it.
Meanwhile, slice peaches and season with a little olive oil and white pepper. Grill the slices on each side— either on a BBQ or hot grill skillet. If you don’t have any form of grilling available, skip this step! Ripe and juicy peaches are delicious on their own!
Toss arugula with a little olive oil, salt and lemon juice. Transfer to a platter and start topping with small pieces of prosciutto. Add on the peaches, and tear apart burrata adding to fill platter gaps. Garnish with chopped fresh basil. Finish off with a drizzle of olive oil, balsamic glaze, salt and pepper.
