Garlicky Grilled Artichokes

🔥 THE MOST FIRE ARTICHOKES🔥

Ingredients:
2 artichokes
Garlic, sliced or minced (lots of cloves)
Garlic, grated (1-2 cloves)
Lemon zest and juice
Breadcrumbs
Parsley
Parmesan
Olive oil
Salt + pepper

This is sort of a no-recipe, recipe so bear with me.

Start by prepping your artichokes: cut off the top and trim the leaves to remove pointy thorns. Cut in half, lengthwise. Boil in a pot of water until tender — about 20 minutes. I add peppercorns to the pot of water but totally optional. Once the artichokes slightly cool, use a spoon to carefully remove the prickly choke interior, leaving the meaty heart in tact (check out my highlights for artichoke prep tutorial!).

Meanwhile, in a small bowl combine minced parsley; lemon zest and juice; minced garlic clove, salt and pepper. Set aside.

Sauté lots of chopped garlic in olive oil, careful so it’s doesn’t burn. Brush this on the open side of the cooked artichokes and season with salt and pepper. Grill face down until slightly crisped (took 5 min on my grill).

Toast breadcrumbs with … you guessed it … more minced or chopped garlic.

Spoon the parsley garlic mix over the finished grilled artichokes. Top generously with toasted breadcrumbs and any crispy garlic residue from the olive oil. Grate on lots of parmesan.

Serve with wedges of lemon. Adjust any seasonings to taste and enjoy!
