Elixir Soup

Green Elixir Soup, Kitschenista

Feed your soul with this magical green soup. Earthy, healing and cleansing all at the same time. Great way to use up those random veggies in the fridge. Comes together in 30 minutes.

Ingredients:
🔮 6 cloves garlic 

🔮 1 yellow onion 

🔮 1 TBL fresh grated ginger

🔮 1 tsp fresh grated turmeric

🔮 broccoli, full head

🔮 celery, several ribs

🔮 1 green zucchini

🔮 spinach, big handful 

🔮 fresh basil, big handful

🔮 fresh parsley, small handful  

🔮 coconut milk, a few tablespoons (optional) 

🔮 olive oil, salt, and pepper 

🔮 6 cups veggie stock  

Instructions:

  • In a large pot, heat olive oil and sauté garlic, onion and shallot until translucent - about 5-7 minutes.

  • Add in grated ginger + turmeric, the chopped broccoli, zucchini, celery — add a little more olive oil if necessary.

  • Once the veggies are softened, add ~6 cups of broth. Simmer for 10 min with the lid on.

  • Remove from heat and wilt in the spinach, basil, and parsley.

  • Transfer to @vitamix and blend until smooth. Option to add a little coconut milk for flavor and creaminess (make sure you are using a clean coconut milk, ingredients should only include organic coconut and filtered water — NO gums or additives. The WF365 brand is not clean. Friendly reminder to read the labels!). If you do not want to add coconut milk to thicken (and add a lovely taste), you could sub with half an avocado for creaminess.

  • Adjust s+p to taste again, then serve with a wedge of lime.

    Note: Recipe very much open to interpretation and can be made with a variety of green vegetables [think brussels, kale, etc.] Just know a little goes a long way with some more bitter veggies and to use a larger proportion of netural flavor like zucchini. Can also throw in shallot. You do you!
