Pumpkin Bread

For all the ~ fall feels ~ keep scrolling.

Note: recipe makes two loaves of pumpkin bread!

Ingredients:

🍁 2 1/3 cups all purpose flour
🍁 1 cup whole wheat flour
🍁 2 1/2 cup sugar
🍁 2 tsp baking soda
🍁 1.5 tsp salt
🍁 1 t cinnamon
🍁 4 eggs
🍁 1 cup coconut oil (melted)
🍁 2/3 cup water
🍁 1 can pumpkin purée* [look for CLEAN pumpkin purée, this means no additives like cane sugar]

Instructions:

🍁 Pre-heat oven to 350°
🍁 Grease two loaf pans [coconut oil or butter]
🍁 In a VERY LARGE bowl, combine all dry ingredients and mix well.
🍁 Create a well in the center of the dry ingredients and add in all wet ingredients, again, mixing very very well until everything is incorporated.
🍁 Split into the two loaf pans and bake for 45-60 min or until done.

Optional: add chocolate chunks
