Soba Noodle Salad

Crunchy, flavorful, satisfying, and healthy

Salad Ingredients:
- Soba or rice noodles
- Napa cabbage
- Purple cabbage
- Pepper
- Carrot
- Peanuts
- Mint, basil, scallion, cilantro

Dressing ingredients:
- Garlic
- Ginger
- White miso
- Coconut aminos (or soy sauce)
- Rice vinegar
- Chili sesame oil*
- Avocado oil
- Lime juice
- White pepper
*use plain sesame oil if you don’t want heat

Instructions:
Prepare all your ingredients! The base should be FRESH shredded cabbage and carrot (pre-shredded doesn’t taste the same. it’s old and oxidized). Thinly slice the pepper and chop the mint, basil, scallion. I used about 1:3 ratio of noodles to cabbage.

For the dressing, adjust proportions to taste! I didn’t measure a thing (sorry). 2 cloves grated garlic and fresh ginger. Tablespoon of miso. Few tablespoons coconut aminos and rice vinegar. Little bit chili sesame and avocado oil. Juice of one lime and some white pepper. Miso and coconut aminos are sooo naturally salty that you don’t need to add any salt!

Combine all and enjoy! Top with chopped peanuts.
