Midnight Pasta
Aglio e Olio!
Ingredients:
〰️ spaghetti or linguine, half pound
〰️ olive oil
〰️ 10-15 cloves garlic, sliced
〰️ red pepper flakes
〰️ pasta water
〰️ parsley flakes
〰️ salt + pepper
Instructions:
Bring pot of salted water to a boil and cook pasta al dente.
While the pasta cooks (you have yourself 9 minutes), heat olive oil in a saucepan, adding garlic, red pepper flakes and black pepper. After 2 minutes, remove from heat until pasta is ready. If the garlic burns, you’ll need to start over. Add cooked pasta directly into the olive oil pan, tossing very well with 1/3 cup pasta water and chopped parsley until the pasta is coated and glossy. If the sauce is feeling too liquidity, you can save it by tossing in a good tablespoon of cultured butter to help emulsify. Salt and pepper to taste.
