Easier, Healthier Egg Salad

Healthier egg salad

Love it or hate it, egg salad is a quintessential recipe everyone should know!

Ingredients:
Half dozen hard boiled eggs
Celery
Shallot
Scallion
Mayo
Dijon
Cayenne
Salt + Pepper

Directions:
Hard boil your eggs (there are several ways to hard boil eggs. today, I did so by adding 6 eggs into a pot with water filled to 1’’ above the eggs. I brought this to a roaring boil, then immediately turned off the heat, put on a lid, and let the eggs sit for 10 minutes.).

Meanwhile, very finely dice 2-3 celery ribs, 1 small shallot, and a scallion. When the eggs have boiled and cooled completely, carefully peel, slice in half and set the yolks aside in a bowl. Combine the yolks with a little mayo (I use a totally clean avocado mayo from @primalkitchenfoods that I HIGHLY recommend), dijon and a bit of cayenne pepper. Mix until creamy. Then add in diced egg whites, celery, shallot and combine. Salt and pepper to taste. Add chopped celery leaves (game changer), any other seasonings to taste and enjoy!
