Radish Miso Salad

@theediblegardenist is the πŸ‘‘ of radishes and we had so much fun making this springy, rainbow, flavorful, unique salad together πŸ’˜ inspired by @foodmymuse with some twists!

Salad ingredients:
2-3 watermelon radishes
2-3 persian cucumbers
1/2 avocado
Sesame seeds
Scallions
Furikake (or crumpled up seaweed snack)

Dressing ingredients:
1 cloves garlic
Grated ginger
Spoonful miso
Drizzle tamari
Drizzle rice vinegar
Drizzle toasted sesame oil

Using a mandoline, slice radishes and cucumbers extremely thin. Arrange in overlapping concentric circles on a platter. Fan out the half avocado in the center. Whisk together dressing ingredients, drizzle on the veggies and garnish with sesame seeds, scallions and seaweed.
