Erewhon Kale Salad

EREWHON-ESQUE KALE SALAD 💫 everyone (literally everyone) is obsessed with the @erewhonmarket kale salad and for good reason — it’s delicious. Here’s my take on the recipe, which is super easy to modify based on what ingredients you have on hand. Erewhon’s salad dressing includes a drizzle of maple syrup. I prefer acidity so I omit from my recipe but feel free to add in!

Salad:
Kale, de-stemmed and chopped into bite size pieces
Avocado, cubed
Cannellinni beans, drained & rinsed
Sunflower seeds (roasted and unsalted)
Optional: hemp seeds (I didn’t have any!)

Dressing (by hand):

1 clove garlic (microplaned)

1 lemon, juice (or 1/2 preserved lemon + 1/2 fresh juice)

1-2 Tbl tahini

Olive oil

Salt & pepper

OR toss into a magic bullet/ninja and pulse until smooth.

Directions: Wash, de-stem and chop kale. Toss into a large bowl and add in a drizzle of olive oil and pinch of salt and massage until nice and relaxed. Add in beans, avocado, and seeds. Dress, toss well and enjoy!
