Zucchini Flowers

Zucchini flower season is so special! It only lasts for a short period each year so gotta make the most of it!

Ingredients:
〰️ zucchini blossoms, rinsed
〰️ ricotta
〰️ parmesan
〰️ olive oil, salt and pepper
〰️ eggs
〰️ panko
〰️ for dipping: balsamic, olive oil, marinara or arrabbiata sauce

Instructions:
〰️ rinse, dry and prep blossoms ⁣
〰️ combine ricotta, grated parm, s+p ⁣
〰️ gently pipe filling into blossoms⁣ (you can use a ziplock bag and cut off the corner)
〰️ dip stuffed blossoms in egg wash (can season eggs with s+p)
〰️ coat in panko, crisps up better than breadcrumbs ⁣
〰️ heat a pan + add olive oil ⁣
〰️ fry stuffed blossoms til golden⁣
〰️ cool on a towel-lined plate, blot excess oil⁣
〰️ squeeze of lemon juice to balance
〰️ enjoy with dipping of choice
