Lemon Rose Olive Oil Cake

🍋 LEMON ROSE OLIVE OIL CAKE🌹


The perfect recipe for spring ~

Ingredients:
1 1/3 cup sugar
3 small meyer lemons
1 1/2 cup high quality olive oil
3 eggs
1 1/4 cup milk
1 1/2 tsp vanilla extract
1 tsp rose water
2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
Icing: 1/2 cup powdered sugar (sifted), zest and juice of 1-2 lemons
Optional: dried crushed rose petals

Instructions:
Combine sugar with the zest of 2-3 lemons and mix well (with fingers) until fragrant. Add in the juice of 2 lemons, olive oil and eggs. Whisk well. Add milk (any type will do!), vanilla and rose. Whisk again. Add in sifted dry ingredients.

Pour into a greased and lined spring form pan and bake at 350° for 50-60 min. Allow to cool completely before removing from the pan.

For the icing, whisk together sifted powdered sugar and lemon zest and juice until desired consistency is reached. Garnish with dried crushed rose petals.
