Simple Roasted Halibut
Light, flavorful, easy one-dish dinner.
Ingredients:
Halibut
Cherry tomatoes, halved
10 cloves garlic, halved
Kalamata olives, halved
Basil
Parsley
Lemon
Salt and pepper
Olive oil
Instructions:
Pre-heat oven to 450. In a heatproof dish add tomatoes, garlic, olives and olive oil. Roast for about 10 minutes. Pat dry fish, seasoning with salt and pepper. Add to tomato confit mix and continue to cook until cooked through, about 15 minutes. Garnish with lemon juice and chopped basil and parsley.
