Vegan Spring Rolls
This is a must-make. I repeat. Must make.
Ingredients:
Veggie medley (mushrooms, carrots, onion, scallion, cabbage)
Garlic
Ginger
Soy sauce or coconut aminos
Rice paper
Sesame seeds
Chili oil
Lime
Instructions:
Finely chop your veggies and sauté with grated ginger and garlic until softened. Add in a little white pepper and drop of soy sauce.
One by one, place your rice paper wrappers in a shallow dish of warm water until softened. Transfer to a counter or smooth surface (I love using silicon baking mats!) and smooth out. Add a large spoonful of veggie filling, roll and wrap tightly. Feel free to double wrap a spring roll with two layers of rice wrapper if one rips.
Heat a skillet with a little avocado (or neutral) oil and pan fry until golden on both sides.
Blot off excess oil, then plate and garnish with sesame seeds, scallions, and lime. Serve with chili oil / soy sauce.
