Kale Salad with Grilled Corn & Peaches
🌟 DINO KALE DOES SUMMER 🌟 Simple easy greens to throw on the dinner table for your next BBQ.
Salad:
- Dino kale, de-stemmed and chopped into bite size pieces
- 3 ears corn, grilled and de-cobbed
- 1 avocado, cubed
- 2 peaches, cubed
- 3 early girl tomatoes
Dressing (shake well in a mason jar):
- 1 lemon, juice
- Champagne or apple cider vinegar
- 1 Tbl dijon mustard
- olive oil
- salt
- pepper
To assemble …
Remove the ribs of the kale and chop, rinse and dry well. Massage with a little bit of olive oil to soften up the leaves (easier to digest!). Mix in all ingredients. When ready to serve, pour in the dressing and toss to combine.
