Easy Peachy Cake
Easy Peasy Peachy Cake! The dessert that needs to grace your table before peach season comes to a close.
Ingredients:
🍑 3 ripe peaches
🍑 1.5 cups flour
🍑 1.5 tsp baking powder
🍑 0.5 tsp salt
🍑 1.5 sticks butter (room temp)
🍑 1 cup sugar
🍑 2 eggs
🍑 1/4 cup greek yogurt
🍑 2 tsp vanilla extract
🍑 Optional: serve with fresh peach slices and a scoop of vanilla ice cream …& a bottle or two of champagne ...
Directions:
🍑 Score the bottom of your peaches (mark an "X") and blanch in boiling water for 1 minute. Once cooled, the skins should slip right off. Remove the pit and slice; set aside.
🍑 In a medium bowl, combine flour, baking powder, salt; set aside.
🍑 In a large bowl, use a mixer to whip the butter until nice and creamy. Add in the sugar and continue to beat until fluffy. Add in the eggs, one at a time, mixing between. Add in greek yogurt and vanilla. Fold in the peaches and mix until just combined.
🍑 Transfer mixture to a well-greased cake pan. Sprinkle a little more sugar on top to create a nice crisp layer. Bake at 350 for about 40 minutes.
