Sweetie Kale Salad

kale salad with dates and manchego

What shall we name her? Sweetie kale salad? She is sweet, and tart, and likely the best kale salad you'll ever have. 

Ingredients (this is for 2 servings):

1 bunch lacinato kale, de-stemmed and finely chopped

1/2 shallot, finely diced 

3-4 medjool dates, diced 

1/3 cup hazelnuts, crushed and toasted 

Manchego or other hard sheep's milk cheese

Lemon wedge

Olive oil

Salt 

Dressing: dijon mustard, champagne vinegar, olive oil, salt and pepper 

Directions: In a large bowl, add kale and a drizzle of olive oil and salt. Massage with your hands until the kale is nice and softened. Add in shallots and a squeeze of lemon juice. Grate in some manchego. Add the dressing and toss well. Plate the salad and top with more grated manchego, chopped dates, and toasted hazelnuts. 

Notes: to toast hazelnuts, roughly chop with a large knife. Head a pan to medium, add the nuts and toss around until slightly browned and aromatic.
