Cucumber Avo Salad
Oh so crunchy.
Ingredients:
4-5 persian cucumbers
1/2 avocado
Pinch of salt
2T vinegar (rice, white, or chili)
2T avocado oil
Dash of low sodium soy sauce
Drizzle sesame oil
Toasted sesame seeds
Scallions
Instructions:
🥒 Slice cucumbers into half moons [also recommend cutting on the bias aka diagonal!]. Add a pinch of salt and let it sit for 30 minutes. Drain excess water.
👩🏻🍳 In a bowl, combine avo oil, vinegar and soy sauce. Mix in drained cucumbers.
🥑 Transfer to bowl or platter (optional) and top with sliced avocado. Drizzle toasted sesame oil, and garnish with sesame seeds and scallions.
