Cucumber Avo Salad

Oh so crunchy.

Ingredients:

  • 4-5 persian cucumbers ⁣

  • 1/2 avocado ⁣

  • Pinch of salt ⁣

  • 2T vinegar (rice, white, or chili)⁣

  • 2T avocado oil ⁣

  • Dash of low sodium soy sauce⁣

  • Drizzle sesame oil ⁣

  • Toasted sesame seeds

  • Scallions ⁣

Instructions:
🥒 Slice cucumbers into half moons [also recommend cutting on the bias aka diagonal!]. Add a pinch of salt and let it sit for 30 minutes. Drain excess water. ⁣

👩🏻‍🍳 In a bowl, combine avo oil, vinegar and soy sauce. Mix in drained cucumbers. ⁣

🥑 Transfer to bowl or platter (optional) and top with sliced avocado. Drizzle toasted sesame oil, and garnish with sesame seeds and scallions. ⁣
