Corn Salad

It’s not summer without this loaded corn salad.

Ingredients:

🌽 Fresh corn [cooked and sliced off the cob]
🌽 Persian cucumber, diced
🌽 Cherry tomatoes, sliced
🌽 Red onion, minced
🌽 Green onion, chopped
🌽 Avocado, cubed
🌽 Feta, crumbled
🌽 Basil
🌽 Salt + pepper
🌽 Fresh lime juice
🌽 Olive oil

Instructions:
Slice corn into a large bowl.

Toss in all ingredients and mix. Season to taste with a healthy drizzle of olive oil, salt and pepper, and lots of fresh lime juice.

Serve family style from a bowl or plate and garnish with more fresh basil!
