Lamb Meatballs
Spice up your life [and dinner routine] with these lamb meatballs.
Ingredients:
1lb ground lamb [grass fed, organic if available, you know the drill!]
1/4 cup pine nuts, chopped
1/2 yellow onion, grated [very imp!]
1 shallot, minced
1-2 cloves garlic, grated
Parsley, mint, dill; (small handful) all chopped
Lemon zest [1/2 lemon]
1 Egg
1/2 cup breadcrumbs
Spices: Salt, pepper, a little cumin and harissa (optional)
Instructions:
Combine all ingredients and mix until combined. Roll into small meatballs and bake on a parchment-lined baking sheet at 425° for 12 minutes. Then broil for an additional 5 minutes or until cooked through.
Pair with a loaded greek salad, fresh pita, and hummus.
