Lamb Meatballs

Spice up your life [and dinner routine] with these lamb meatballs.

Ingredients:

  • 1lb ground lamb [grass fed, organic if available, you know the drill!]

  • 1/4 cup pine nuts, chopped

  • 1/2 yellow onion, grated [very imp!]

  • 1 shallot, minced

  • 1-2 cloves garlic, grated

  • Parsley, mint, dill; (small handful) all chopped

  • Lemon zest [1/2 lemon]

  • 1 Egg

  • 1/2 cup breadcrumbs

  • Spices: Salt, pepper, a little cumin and harissa (optional)

Instructions:
Combine all ingredients and mix until combined. Roll into small meatballs and bake on a parchment-lined baking sheet at 425° for 12 minutes. Then broil for an additional 5 minutes or until cooked through.

Pair with a loaded greek salad, fresh pita, and hummus.
