Citrus Baked Salmon

ONE PAN CITRUS DIJON SALMON. This impressive and easy dinner come together in less than 30 minutes. Gluten free, dairy free, 100% delicious.


Ingredients:
Salmon
Fennel, sliced thin
Citrus (such as blood orange, naval orange, grapefruit, lemon)
Olive Oil
Salt & pepper
For the dijon glaze: 3-4Tbl dijon mustard, 3 cloves grated garlic, 1-2Tbl olive oil, squeeze of lemon


Directions:

Preheat oven to 400°.

Prep the citrus - using a pairing knife, remove the skin and cut into slices. Set aside.

In a small bowl, combine mustard, olive oil, grated garlic, and lemon juice. Set aside.

On a parchment-lined baking sheet or any oven proof dish, add thinly sliced fennel. Drizzle with a little olive oil and salt for seasoning. Layer on your citrus of choice.

Pat dry salmon and add to the baking dish. Season with a little salt and pepper. Spoon on dijon mixture just enough to cover the filets. Optional: garnish with lemon zest and the fennel fronds.

Bake for 12-18 minutes or until cooked through.

Recipe pairs wonderfully with fingerling potatoes, a side of rice, steamed asparagus or veggies of choice.
