Tahini Cacao Bites
Every bite packed with tahini-chocolately flavor …yum!
Ingredients:
Organic oats
Vegan protein powder (optional, I did not use)
Walnuts
Cacao nibs
Hemp seeds
Chia seeds
Maple syrup &/or 2-3 dates
Tahini
Vanilla extract
Sea salt
Drizzle (optional): melted chocolate chips, tahini, sesame seeds
Directions:
In a nutribullet (or equivalent) blend about 1-1.25 cups organic oats until flour-like texture is achieved. If you are adding protein powder, make sure to not exceed the aforementioned total volume of dry ingredients. Transfer mixture to a bowl and set aside.
Re-using the bullet, add in a handful of walnuts, few tablespoons of cacao nibs, teaspoon or so each of hemp and chia seeds. If you are using dates, add now too. Pulse until just blended.
Add mixture in with the oat flour and add in a generous few tablespoons (about 1/4 – 1/3 cup) tahini, drizzle of maple syrup, spoonful vanilla extract and a pinch of sea salt. Mix until a cookie-dough like texture is achieved. Taste test and adjust seasonings to taste – you may prefer a little more syrup to help sweeten.
In the palm of your hands, roll the dough into small balls and rest on a parchment-lined cookie sheet. Drizzle over melted chocolate/tahini mixture and top with sesame seeds. Refrigerate for at least 15 minutes.
