Peaches n Halloumi Kale Salad
As peach season comes to a close (wah!) I bid adieu with this 15-minute chopped kale, peach & halloumi salad. π
Ingredients:
- Kale, de stemmed and well chopped
- Shallot, minced
- 1 peach, cubed
- Halloumi, cubed
- 1 slice sourdough, toasted and cubed
- Sunflower seeds
- Hemp seeds
- Olive oil @getgraza π«ΆπΌ
- Salt
Dressing (shake together in a mason jar!):
Dijon mustard, lemon, champagne (or apple cider) vinegar, olive oil, salt and pepper
In a large bowl, massage kale with a little olive oil and salt. Heat a pan and grill halloumi until nice and browned). Add all ingredients into the salad. Drizzle with dressing and toss well. Season with extra lemon juice to taste.
Pairs wonderfully with grilled shrimp or chicken. Enjoy!
