Rad Green Pesto

Pesto but make it veggie-fied.

Ingredients:

  • pasta (radiatori)

  • broccoli

  • peas

  • basil

  • garlic

  • pine nuts

  • walnuts

  • parm

  • salt and pepper

  • lemon juice

  • pasta water

  • olive oil

  • panko crumbs (toasted)

Instructions:

Cook your pasta al dente and meanwhile, steam or blanch a handful of broccoli and peas. Then combine all pesto ingredients into a food processor. I used about a half cup of broccoli and peas, two cloves garlic, the juice of one lemon, hugeee handful of basil, a bit of nuts, tons of parm and only a little pasta water and olive oil. As always, adjust all seasonings to taste. It is much easier to start with less and add more (definitely go light on the garlic and nuts to start!).
