Whole Roast Chicken

🐓 LEMON GARLIC ROAST CHICKEN 🐓 I’ve entered my chicken era and I can assure you it’s lip-smacking delicious. I’ve always heard people say “it’s so easy to roast a chicken” but I never believed them. I’m here to tell you it IS THAT EASY.

Ingredients:
1 whole chicken — I use @maryschicken
4 lemons (cut in half, remove visible seeds)
3 heads of garlic (tops cut off so the garlic head is exposed)
Kosher salt
Cracked black pepper
4Tbl olive oil (or melted butter)
Optional: kitchen twine, meat thermometer

Directions:
Pre-heat the oven to 425º.

Bring the chicken to room temperature and place on a plastic cutting board. Remove the giblets from the cavity and throw away.

Use paper towels to pat the chicken dry from top to bottom. Flip the bird over and seriously continue to pat it down, everywhere. We need the skin totally dry for it to get a good crisp.

Optional: with the breast side of the chicken facing up, carefully slice a slit along the leg joint of the chicken. This helps determine if the chicken is cooked through once we take it out of the oven later on.

Heavily season the chicken with kosher salt and ground pepper, including the cavity. Place half a lemon and garlic head in the cavity as well. We want to season the chicken from the inside out to bring out the best flavors.

Use kitchen twine to tie the legs together (like how a rotisserie chicken is done). This holds the chicken together and keeps it juicy.

Place the chicken in a cast iron skillet or dutch oven. Add the lemons and garlic, face down. Pour the olive oil (or melted butter) on top of the chicken.

Roast @ 425° for 50 minutes or until the internal temperature of the chicken reaches 165°. When you cut into the thigh, the juice should run clear and the meat should be white and tender. Allow to cool before slicing!! You’ll lose the juices. Use the lemons to squeeze onto the chicken and squeeze out the roasted garlic cloves. It’s soooo good. Serve with the chicken jus and ENJOYYYYY!
