Soba Noodles
If you haven’t been introduced to buckwheat soba noodles, it’s about damn time!
Ingredients:
Soba noodles
1 bunch scallions
4 cloves garlic
1-2 inches ginger, grated
shiitake mushrooms, sliced
1-2 jammy eggs (boil water and cook for 7 minutes)
cilantro
sesame seeds
sesame oil
coconut aminos
rice vinegar
Directions:
Bring a pot of water to a boil. Cook soba noodles for about 4 minutes. Rinse and drain under cold water.
Chop up the bunch of scallions, leaving half aside for garnish. Grate the ginger, also leaving a little bit aside (for the dressing). Sauté scallions, ginger and garlic on low heat. Once done, remove from the pan and set mix into the noodles. Sauté the mushrooms in the same pan.
For the dressing, just do a few splashes coconut aminos, rice vinegar and mix in the remainder of the grated ginger.
Pour the dressing onto the noodles and gently toss. Top with mushrooms, raw scallions, cilantro, jammy eggs, and sesame seeds.
This makes for an easy, delicious and HEALTHY MEAL! Buckwheat soba noodles have great nutritional benefits. Don’t want an egg? Top with tofu, salmon, or protein of choice.
