Fancy Pants Shrimp Cocktail

Cooking shrimp in an aromatic broth is subtle flavor game changer! Learned this tip from my fave @cafehailee !!
Ingredients:
Fennel
Shallot
Head of garlic
Celery
Parsley
Half a lemon
Peppercorns
Kosher salt
Water
Shrimp, de-shelled (tails on)
Lemon wedges for serving
For the cocktail sauce β ketchup, horseradish, Worcestershire, dash of Tabasco (or double dash), lemon
NOTES: when itβs time to cook the shrimp, have a large ice bath ready (fill a bowl with ice and cold water).
Directions:
Simmer aromatics in a pot of water for 30 minutes. Remove vegetables from the water, and while water is boiling, turn off the heat and add shrimp. Put on a lid. The shrimp will cook fast - 2 minutes, set a timer! Immediately transfer the cooked, pink shrimp into an ice bath.
To serve, I crushed ice and put onto a platter. I used the excess fennel to garnish the platter before adding the shrimp, cocktail sauce, lemon wedges, and fresh cracked pepper.
